Kicker can see the post and the bar (the wall is back 10 yards) and besides the goal doesn’t move. Think of it like a free throw, in a way. He is aiming for a spot that doesn’t move.

He’s lined up the shot before the wall is set. They practice direct kicks all the time, and Rice is a phenomenally accurate hitter. He takes all Arsenal’s rightfoooted corners(and they get a lot). What was different in this game is these are the first direct free kicks he’s taken this season (or maybe one previously?)

They had a set routine for the wall to scatter so they had obviously had practiced it.
